Paneer Bhurji Pulao (Protein-Packed Power)

Crumbled paneer sautéed with masalas and cooked with rice in one pot. It's protein-rich, quick, and super satisfying

Ingredients
  

  • 1½ cups basmati rice rinsed and soaked for 20 minutes
  • 250 g paneer crumbled
  • 2 tablespoons ghee or vegetable oil
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • 1 small green bell pepper finely chopped
  • 1 –2 green chilies finely chopped
  • 1 tablespoon ginger-garlic paste
  • ½ cup green peas
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 3 green cardamom pods
  • 3 cloves
  • 1 small cinnamon stick
  • ½ teaspoon turmeric powder
  • 1 teaspoon Kashmiri chili powder
  • ½ teaspoon garam masala
  • ½ teaspoon ground cumin
  • 3 cups water or vegetable stock
  • 1 teaspoon salt or to taste
  • 2 tablespoons fresh coriander chopped
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon lemon juice

Method
 

  1. Heat the ghee or oil in a heavy-bottomed pot over medium heat and add the cumin seeds, bay leaf, cardamom, cloves, and cinnamon. Once fragrant, add the onion and sauté until lightly golden. Stir in the ginger-garlic paste, green chilies, and bell pepper and cook for 2–3 minutes. Add the chopped tomato, turmeric, Kashmiri chili powder, ground cumin, garam masala, and salt, then cook until the tomato softens and the masala becomes fragrant. Add the crumbled paneer and green peas and gently sauté for 2–3 minutes, allowing the paneer to absorb the spices. Stir in the soaked and drained basmati rice, then carefully add the water or vegetable stock. Bring to a gentle boil, reduce the heat to low, cover tightly, and cook for 15–18 minutes until the rice is tender and the liquid has been absorbed. Turn off the heat and let the pulao rest, covered, for 5 minutes. Fluff gently with a fork, then finish with fresh coriander, mint, and lemon juice.

Notes

Don't overcook the paneer before adding the rice. A short sauté keeps the paneer soft and tender while allowing it to absorb the aromatic masala. For an extra-rich pulao, use homemade or full-fat paneer and finish with a small spoonful of ghee just before serving.
