Mas Riha: Authentic Maldivian Tuna Curry

Ingredients
  

500 g fresh tuna, cut into bite-sized pieces
1 cup coconut milk
1 small onion, finely sliced
2 cloves garlic, minced
1-inch piece fresh ginger, finely grated
2–3 fresh green chilies, sliced
1 tomato, finely chopped
8–10 curry leaves
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground black pepper
½ teaspoon chili powder, or to taste
1 tablespoon coconut oil or vegetable oil
½ teaspoon salt, or to taste
½ cup water
1 tablespoon fresh lime juice
Fresh coriander, chopped, for garnish
Steamed rice or roshi, for serving

Method
 

Heat the oil in a heavy-bottomed pan over medium heat and gently sauté the onion, garlic, ginger, green chilies, and curry leaves until fragrant and the onion begins to soften. Add the turmeric, cumin, coriander, black pepper, and chili powder, stirring for about 30 seconds to release their aromas. Add the chopped tomato and cook until it softens into the spice mixture. Pour in the coconut milk and water, season with salt, and bring the curry to a gentle simmer. Add the tuna pieces and cook gently for about 8–10 minutes, or until the fish is just cooked through and tender. Avoid vigorous boiling, as it can make the tuna dry and break apart. Finish with fresh lime juice and garnish with chopped coriander before serving hot with steamed rice or warm roshi.

    Notes

    Don't overcook the tuna. Add it after the curry base has developed its flavor and simmer gently until the fish is just tender. This keeps the tuna moist while allowing it to absorb the fragrant coconut and spices.
