Vegetable Lo Mein with Rice Noodles

Ingredients
  

  • 250 g 9 oz rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 small onion thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 medium carrot julienned
  • 1 cup shredded cabbage
  • ½ cup snow peas
  • 2 green onions sliced
For the Sauce
  • 3 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • ¼ teaspoon black pepper

Method
 

  1. Cook the noodles: Prepare the rice noodles according to the package instructions. Drain, rinse briefly with cold water, and set aside.
  2. Make the sauce: In a small bowl, whisk together tamari, rice vinegar, sesame oil, honey, cornstarch, water, and black pepper.
  3. Cook the vegetables: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the onion, bell pepper, carrot, cabbage, and snow peas. Stir-fry for 3–4 minutes until crisp-tender.
  4. Add aromatics: Add the garlic and ginger, stirring for about 30 seconds until fragrant.
  5. Combine: Add the cooked rice noodles and prepared sauce to the pan. Toss everything together for 2–3 minutes until the noodles are hot and evenly coated.
  6. Finish: Stir in the green onions and cook for another 30 seconds.
  7. Serve: Serve immediately, topped with extra green onions or sesame seeds if desired.

Notes

Slightly undercook the rice noodles before stir-frying so they stay firm and do not become mushy.
