Ingredients
  

1 head butter lettuce or crisp romaine leaves, separated
1 cup cooked shredded chicken, shrimp, or crumbled extra-firm tofu
3 tbsp natural creamy peanut butter
1 tbsp gluten-free Tamari
1 tbsp fresh lime juice
1 tsp honey or maple syrup
1/2 tsp grated fresh ginger
Crushed peanuts and cilantro for garnish

Method
 

Whisk the Sauce: In a small bowl, whisk together the peanut butter, Tamari, lime juice, honey, ginger, and a splash of warm water until smooth and pourable.
    Combine: Toss your protein of choice into the peanut sauce until fully coated.
      Assemble: Spoon a generous dollop into the center of each lettuce leaf. Top with fresh cilantro and crushed peanuts for that irresistible crunch.

        Notes

        Use certified GF tamari. Don't overcrowd pan. Serve immediately.
