Ingredients
  

  • 450 g 1 lb fresh green beans, trimmed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 –4 dried red chilies sliced
  • 1 teaspoon Sichuan peppercorns lightly crushed
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 2 green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

  1. Prepare the green beans: Wash and trim the green beans, then pat them dry thoroughly.
  2. Cook the beans: Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the green beans and stir-fry for 6–8 minutes until blistered and tender-crisp.
  3. Add aromatics: Add the garlic, ginger, dried chilies, and Sichuan peppercorns. Stir-fry for 30–60 seconds until fragrant.
  4. Add the sauce: Stir in the tamari, rice vinegar, and honey. Toss continuously for 1–2 minutes until the sauce lightly coats the beans.
  5. Finish: Drizzle with sesame oil and add the sliced green onions. Toss once more and remove from the heat.
  6. Garnish and serve: Sprinkle with sesame seeds if desired and serve immediately as a side dish with steamed rice or your favorite Asian-inspired meal.

Notes

Keep the pan very hot while stir-frying to blister the beans beautifully without making them soft or watery.
