Prepare the tomatoes and peppers
- Preheat your oven to 180°C (350°F).
- Wash the vegetables and pat them dry. Cut the tops off the tomatoes and peppers, keeping the tops to use as lids.
- Carefully scoop the flesh from the tomatoes, placing it in a bowl. Avoid piercing the tomato shells. Remove the seeds and membranes from the peppers.
- Arrange the hollowed vegetables upright in a lightly oiled baking dish. Sprinkle a little salt inside each one.
- Chef’s tip: Choose tomatoes that are ripe enough to be flavorful but firm enough to hold their shape. Tomatoes that are too soft can collapse during baking.
Prepare the herby rice filling
- Finely chop the reserved tomato pulp.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion and cook for 5–7 minutes, until softened. Stir in the garlic and cook for another 30 seconds.
- Add the chopped tomato pulp, oregano, salt, pepper, and optional sugar. Cook for about 5 minutes, allowing the mixture to become saucy.
- Stir in the uncooked rice and coat it with the tomato mixture. Cook for 2 minutes, then remove the skillet from the heat.
- Fold in the parsley, mint, and dill. Add the remaining olive oil and mix well.
- The rice does not need to be fully cooked at this stage. It will continue cooking inside the vegetables in the oven.
Fill the vegetables
- Spoon the rice mixture into each tomato and pepper, filling them approximately two-thirds full. Leave room for the rice to expand.
- Place the reserved vegetable tops back on. Pour the hot water or vegetable stock into the bottom of the baking dish, taking care not to wash the filling out of the vegetables.
- Cover the dish loosely with foil.
Bake until tender
- Bake for 45 minutes covered. Remove the foil and continue baking for another 25–40 minutes, or until the vegetables are tender, the rice is cooked, and the tops have developed a lightly browned finish.
- If the rice still looks firm and the pan is dry, add a small splash of hot water and continue baking.
- The exact cooking time depends on the size of the vegetables and the type of rice used.
Make the crispy feta crumble
- While the gemista is baking, combine the crumbled feta, breadcrumbs, olive oil, oregano, parsley, and black pepper in a bowl.
- Spread the mixture on a small baking tray lined with parchment paper.
- Bake at 180°C for approximately 10–15 minutes, stirring once, until golden and crisp. Watch it carefully because feta and breadcrumbs can brown quickly.
- For an even fresher result, prepare the crumble near the end of the gemista’s cooking time so it stays crunchy.
Prepare the fresh figs
- Wash the figs gently and pat them dry. Cut each fig into quarters.
- Toss the pieces with a little olive oil and lemon juice. If you prefer a sweeter finish, add a small drizzle of honey.
- You can serve the figs fresh, or roast them for 5–8 minutes in the oven until slightly softened and caramelized.
Assemble and serve
- Allow the gemista to rest for 10–15 minutes before serving.
- Spoon the crispy feta crumble over the stuffed tomatoes and peppers. Arrange the fresh figs around the vegetables and finish with mint leaves, a little olive oil, and freshly ground black pepper.
- Serve with the juices from the baking dish.
- The contrast is the highlight: juicy baked vegetables, fragrant rice, salty feta crunch, and the soft sweetness of ripe figs.
