Ingredients
  

  • 500 g 1 lb baby bok choy, washed and halved
  • 1½ tablespoons vegetable oil
  • 4 cloves garlic finely minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • ¼ teaspoon black pepper
  • 2 green onions sliced
  • 1 teaspoon sesame seeds optional

Method
 

  1. Prepare the bok choy: Wash the bok choy thoroughly, especially between the leaves. Cut larger pieces in half.
  2. Heat the wok: Heat the vegetable oil in a large wok or skillet over medium-high heat.
  3. Add garlic and ginger: Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Stir-fry the bok choy: Add the bok choy and toss continuously for 3–4 minutes until the stems are tender-crisp and the leaves are wilted.
  5. Season: Add tamari, sesame oil, rice vinegar, and black pepper. Stir-fry for another 1–2 minutes until everything is well coated.
  6. Finish: Remove from the heat and sprinkle with green onions and sesame seeds.
  7. Serve: Serve immediately as a side dish with steamed rice, noodles, or your favorite Asian-inspired meal.

Notes

Keep the bok choy slightly crisp and avoid overcooking it so the stems stay juicy and the leaves remain fresh.
