Ingredients
  

  • 250 g 9 oz rice noodles
  • 2 tablespoons sesame oil
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon creamy peanut butter or tahini
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • ½ teaspoon chili flakes optional
  • 1 small carrot julienned
  • ½ cucumber julienned
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro optional

Method
 

  1. Cook the noodles: Prepare the rice noodles according to the package directions. Drain and rinse under cold water to stop the cooking process.
  2. Make the sesame sauce: In a small bowl, whisk together sesame oil, tamari, rice vinegar, honey, peanut butter, garlic, ginger, and chili flakes until smooth.
  3. Combine: Place the cooled noodles in a large bowl. Pour the sesame sauce over them and toss thoroughly until evenly coated.
  4. Add vegetables: Add the carrot, cucumber, and green onions. Toss gently to combine.
  5. Garnish: Sprinkle with sesame seeds and fresh cilantro if desired.
  6. Serve: Serve immediately or refrigerate for 20–30 minutes for a refreshing cold noodle dish.

Notes

Rinse the rice noodles with cold water after cooking to keep them springy and prevent them from sticking together.
