Ingredients
  

  • 4 large ripe tomatoes finely chopped
  • 1 medium onion finely chopped
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 1 teaspoon dried oregano
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar optional
  • 2 tablespoons olive oil
  • Olive oil for frying

Method
 

  1. Prepare the vegetables: Place the finely chopped tomatoes and onion in a large bowl.
  2. Add the herbs: Add the chopped parsley, fresh mint, and dried oregano. Mix well.
  3. Season: Add salt, black pepper, and optional sugar. Stir until all ingredients are combined.
  4. Make the batter: Gradually add the flour and mix until you have a thick, spoonable batter. If the mixture is too wet, add a little more flour.
  5. Heat the oil: Pour enough olive oil into a frying pan for shallow frying and heat over medium-high heat.
  6. Fry the fritters: Drop spoonfuls of the tomato mixture into the hot oil. Gently flatten each fritter slightly.
  7. Cook until golden: Fry for about 2–4 minutes on each side, until crispy and golden brown.
  8. Drain: Remove the fritters and place them on a paper towel-lined plate to absorb excess oil.
  9. Serve: Serve hot with tzatziki, Greek yogurt, feta cheese, olives, or a fresh Greek salad.
