Moo Shu Pork with Rice Wraps

Ingredients
  

  • 500 g 1 lb pork tenderloin, thinly sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon gluten-free soy sauce or tamari
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
For the Stir-Fry
  • 2 tablespoons vegetable oil
  • 3 large eggs lightly beaten
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 cups shredded cabbage
  • 1 cup sliced mushrooms
  • 1 medium carrot thinly sliced
  • 3 green onions sliced
For the Sauce
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon gluten-free hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar
For Serving
  • 8 –10 rice paper wrappers
  • Warm water for softening
  • Extra gluten-free hoisin sauce optional

Method
 

  1. Prepare the pork: In a bowl, toss the sliced pork with cornstarch, tamari, sesame oil, and black pepper. Let it rest for 10 minutes.
  2. Make the sauce: Mix tamari, gluten-free hoisin sauce, rice vinegar, sesame oil, and honey in a small bowl.
  3. Cook the eggs: Heat 1 teaspoon of oil in a large skillet or wok. Add the beaten eggs and scramble lightly. Remove from the pan and set aside.
  4. Cook the pork: Add 1 tablespoon of vegetable oil to the pan. Stir-fry the pork for 4–5 minutes until browned and fully cooked. Remove and set aside.
  5. Cook the vegetables: Add the remaining oil, then stir-fry garlic, ginger, cabbage, mushrooms, carrot, and green onions for 3–4 minutes until tender but still slightly crisp.
  6. Combine: Return the pork and scrambled eggs to the pan. Pour in the sauce and toss everything together for 2 minutes until evenly coated.
  7. Prepare the rice wraps: Dip each rice paper wrapper in warm water for 5–8 seconds until just softened. Place on a clean plate.
  8. Serve: Spoon the Moo Shu pork filling into each softened rice wrap, fold, and enjoy immediately.

Notes

Soften the rice paper only briefly, as it will continue to soften after dipping and is easier to roll without tearing
