Miso-Ginger Smashed Cucumber Salad

Smashing cucumbers creates jagged edges that trap dressings brilliantly. This chilled, crisp appetizer offers a cooling contrast to rich or spicy main dishes.

Ingredients
  

2 English cucumbers, washed
1 tbsp white miso paste (ensure it is certified gluten-free)
1 tbsp rice vinegar
1 tsp toasted sesame oil
1 tsp grated ginger
1 tsp toasted sesame seeds

Method
 

Place cucumbers on a cutting board and gently smash them using the flat side of a chef's knife or a rolling pin until they crack open. Cut into bite-sized chunks.
    In a large bowl, whisk together the white miso paste, rice vinegar, sesame oil, and ginger until smooth.
      Toss the smashed cucumbers in the dressing, let them marinate for 5 minutes, and garnish with sesame seeds before serving.

        Notes

        Use certified GF tamari. Don't overcrowd pan. Serve immediately.
