Ingredients
  

  • 400 g 14 oz firm or soft tofu, cut into cubes
  • 200 g 7 oz ground pork or beef
  • 1½ tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 2 green onions sliced
  • 1½ tablespoons gluten-free chili bean paste
  • 1 tablespoon gluten-free soy sauce or tamari
  • 1 cup chicken or vegetable broth
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water
  • ½ teaspoon ground Sichuan peppercorns
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper

Method
 

  1. Prepare the tofu: Bring a pot of water to a gentle simmer. Add the tofu cubes and cook for 2 minutes. Drain carefully and set aside.
  2. Brown the meat: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork or beef and cook for 3–4 minutes, breaking it apart as it browns.
  3. Add aromatics: Stir in the garlic, ginger, and half of the green onions. Cook for about 30 seconds until fragrant.
  4. Build the sauce: Add the gluten-free chili bean paste and stir-fry for 1 minute. Add tamari, broth, sugar, black pepper, and Sichuan peppercorns. Bring to a gentle simmer.
  5. Add tofu: Carefully add the tofu cubes and gently stir to coat them in the sauce. Simmer for 4–5 minutes, allowing the flavors to soak into the tofu.
  6. Thicken: Mix the cornstarch with cold water to make a slurry. Slowly stir it into the skillet and cook for 1–2 minutes until the sauce becomes glossy and slightly thick.
  7. Finish: Drizzle with sesame oil and sprinkle with the remaining green onions.
  8. Serve: Serve hot over steamed white rice or cauliflower rice.

Notes

Handle the tofu gently and simmer it in the sauce rather than stirring aggressively to keep the cubes intact.
