Ingredients
  

For the Crust:
  • 1 sheet ready-rolled shortcrust pastry or puff pastry
  • For the Eggplant Layer:
  • 1 medium eggplant sliced into thin rounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
For the Spiced Meat Sauce:
  • 300 g approx. 2/3 lb ground beef or ground lamb
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1/2 cup crushed tomatoes or passata
  • 1/4 cup dry red wine optional
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
For the Béchamel Topping:
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk warm
  • 1/4 cup grated Parmesan or Kefalotyri cheese
  • A pinch of ground nutmeg
  • 1 egg yolk

Method
 

Blind-Bake the Crust
  1. Preheat your oven to 200°C (400°F).
  2. Gently press the pastry sheet into a greased round tart pan (about 9–10 inches). Trim the edges.
  3. Prick the base lightly with a fork, line with parchment paper, and fill with baking weights or dried beans.
  4. Bake for 15 minutes, then remove the paper and weights and bake for another 5 minutes until lightly golden. Set aside.
Roast the Eggplant
  1. Toss the eggplant slices with olive oil, salt, and pepper.
  2. Arrange them in a single layer on a parchment-lined baking sheet and roast at 200°C for 15–20 minutes until tender and lightly browned.
Make the Spiced Meat Sauce
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and garlic, sautéing until soft and translucent.
  2. Add the ground meat, breaking it apart with a wooden spoon, and cook until completely browned.
  3. Stir in the tomato paste, red wine (if using), and crushed tomatoes. Season with cinnamon, oregano, salt, and pepper.
  4. Simmer on low heat for 10–12 minutes until the sauce thickens into a rich, luscious consistency.
Whip Up the Béchamel
  1. Melt the butter in a small saucepan over medium heat. Stir in the flour and cook for 1 minute, stirring constantly.
  2. Gradually pour in the warm milk, whisking continuously to prevent lumps. Cook until the sauce thickens and bubbles.
  3. Remove from heat and stir in the nutmeg, grated cheese, and egg yolk until completely smooth.
Assemble and Bake
  1. Reduce your oven temperature to 180°C (350°F).
  2. Layer the bottom of the pre-baked tart crust with the roasted eggplant slices.
  3. Spoon the rich meat sauce evenly over the eggplant layer.
  4. Pour the creamy béchamel sauce over the top, smoothing it out gently with a spatula.
  5. Bake for 25–30 minutes until the top is golden-brown and bubbling.
  6. Allow the tart to rest for 10 minutes before slicing to ensure clean portions.
