Ingredients
  

For the Greek Yogurt Marinade:
  • ½ cup plain Greek yogurt whole milk or 2% works best
  • ¼ cup fresh lemon juice about 1 large lemon
  • 3 tablespoons olive oil
  • 3-4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Chicken:
  • 1½ to 2 pounds chicken breasts, thighs, or drumsticks

Method
 

  1. In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, garlic, oregano, cumin, paprika, salt, and pepper until fully combined.
  2. Pat your chicken dry with paper towels. If using breasts, pound them to an even thickness for uniform cooking.
  3. Place the chicken in a large bowl or resealable plastic bag. Pour the marinade over, making sure every piece is fully coated.
  4. Cover and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor. For best results, aim for 4-12 hours.

Make-Ahead Tip: Marinate the chicken for up to 24 hours in the fridge. The yogurt's mild lactic acid won't break down the meat like citrus or vinegar would.
No Greek Yogurt? Regular plain yogurt works—just strain it first through a coffee filter or cheesecloth for 30 minutes to thicken it.
