Ingredients
  

For the Wontons
  • 20 gluten-free wonton wrappers
  • 250 g 9 oz ground chicken or pork
  • 2 green onions finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon gluten-free soy sauce or tamari
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
For the Soup
  • 5 cups chicken broth
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 cup bok choy chopped
  • ½ cup sliced mushrooms
  • 2 green onions sliced
  • Salt to taste

Method
 

  1. Make the filling: Combine ground chicken or pork, green onions, garlic, ginger, tamari, sesame oil, and black pepper in a bowl. Mix until well combined.
  2. Fill the wontons: Place about 1 teaspoon of filling in the center of each gluten-free wonton wrapper. Moisten the edges with water, fold the wrapper over the filling, and press firmly to seal.
  3. Prepare the broth: Add chicken broth, tamari, sesame oil, ginger, and garlic to a large pot. Bring to a gentle simmer and cook for 5 minutes.
  4. Cook the wontons: Carefully drop the wontons into the simmering broth. Cook for about 4–6 minutes, or until the wrappers are tender and the filling is fully cooked.
  5. Add vegetables: Add bok choy and mushrooms during the final 2–3 minutes of cooking.
  6. Finish: Taste and adjust seasoning with salt or additional tamari if needed. Stir in the green onions.
  7. Serve: Ladle the hot soup and wontons into bowls and serve immediately.

Notes

Keep the filled wontons covered with a damp towel before cooking so the gluten-free wrappers don't dry out or crack.
