Ingredients
  

  • 500 g 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • ½ small onion finely diced
  • 1 small carrot finely diced
  • ½ cup mushrooms finely chopped
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon gluten-free hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • 2 green onions sliced
  • 1 head butter lettuce or romaine lettuce leaves separated
  • 2 tablespoons chopped peanuts or cashews optional

Method
 

  1. Prepare the lettuce: Wash the lettuce leaves and pat them completely dry. Set aside.
  2. Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the ground chicken and cook for 5–7 minutes, breaking it apart with a wooden spoon until no longer pink.
  3. Add the vegetables: Add the onion, carrot, mushrooms, garlic, and ginger. Stir-fry for 3–4 minutes until the vegetables become tender.
  4. Season: Add tamari, hoisin sauce, rice vinegar, sesame oil, and black pepper. Stir well and cook for another 2 minutes until the sauce coats the chicken.
  5. Finish: Stir in the green onions and remove from the heat.
  6. Assemble: Spoon the warm chicken mixture into the center of each lettuce leaf.
  7. Garnish and serve: Sprinkle with chopped peanuts or cashews if desired. Serve immediately.

Notes

Keep the lettuce leaves cold and crisp, and let the chicken filling cool slightly before adding it to prevent wilting.
