Ingredients
  

  • 2 cans 8 oz each refrigerated crescent dough or crescent dough sheets
  • 1 ½ cups cooked chicken breast finely shredded
  • 4 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika this is what gives the filling its pumpkin-orange color
  • ¼ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 large egg beaten (for egg wash)
  • 12 small pretzel sticks or breadstick pieces for the stems
  • Fresh parsley or a small basil leaf for the "vine" garnish

Method
 

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Make the filling.
  1. In a bowl, mix the shredded chicken, cream cheese, cheddar, sour cream, garlic powder, smoked paprika, onion powder, salt, and pepper until fully combined.
Portion the dough.
  1. Unroll the crescent dough and press the seams together to form two solid sheets. Cut each sheet into 6 even squares (12 total).
Fill and shape.
  1. Place a heaping tablespoon of the chicken filling in the center of each square. Gather the corners up and over the filling, pinching and rolling gently into a ball so the filling is fully sealed inside.
Score the pumpkin lines.
  1. Place each ball seam-side down. Using the back of a knife, press 4–5 shallow vertical lines around each ball, from top to bottom, to create a pumpkin ridge effect.
  2. Add the stem. Brush each ball with egg wash, then push a pretzel stick into the top center to look like a pumpkin stem. Tuck a small parsley leaf beside it.
  3. Bake for 18–22 minutes, until deep golden brown and firm to the touch.
  4. Cool for 5 minutes before serving warm.

Notes

Chill the filling for 10 minutes before shaping, avoid overfilling the dough, and press the pumpkin ridges gently so the filling does not leak.
Prepare the filling a day ahead and refrigerate it—it will be firmer and easier to seal inside the dough.
