Toss the beef in flour.
- In a bowl, coat the beef chunks with flour, salt, and pepper. This helps thicken the stew later and gives the meat a nice sear.
- Sear it if you have 5 extra minutes. Heat oil in a pan and brown the beef on all sides. This step is optional but adds a lot of flavor — skip it if you're really pressed for time, and the stew will still be good.
Load the crockpot.
- Add the beef, potatoes, carrots, onion, and garlic to the slow cooker.
- Pour in the liquid. Add the broth and diced tomatoes (or tomato paste), then stir in the thyme and bay leaf.
Set it and forget it.
- Cook on low for 7–8 hours or high for 4–5 hours, until the beef is fork-tender.
Finish it off.
- Remove the bay leaf, stir in frozen peas or corn if using, and adjust salt and pepper to taste.
