Ingredients
  

For the Potato Layers:
  • 2 lbs Yukon Gold potatoes thinly sliced (about 1/8 inch thick)
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
For the Beef Filling:
  • 1 lb ground beef 80/20 recommended
  • 1 medium yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Creamy Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk whole or 2%
  • 1/2 cup shredded cheddar cheese or a blend of cheddar and Monterey Jack
Topping:
  • 1 cup shredded cheddar cheese or a blend of cheddar and Monterey Jack
  • Optional: Fresh parsley chopped, for garnish

Method
 

Prepare the Potatoes:
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the thinly sliced potatoes with olive oil, salt, and pepper until evenly coated.
Make the Beef Filling:
  1. In a large skillet over medium-high heat, brown the ground beef, breaking it apart with a spoon. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic, thyme, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
Create the Creamy Sauce:
  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
  3. Gradually whisk in the milk until smooth. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.
  4. Remove from heat and stir in the 1/2 cup of shredded cheese until melted and smooth. Season with salt and pepper to taste.

Notes

For the best results, ensure your potato slices are as uniform as possible. This will help them cook evenly. If you prefer a crispier topping, you can broil the casserole for the last 1-2 minutes of baking, watching it very carefully to prevent burning.
