Make the filling.
- In a bowl, combine the rice, onion, olive oil, dill, parsley, mint, tomato paste, half the lemon juice, allspice, cumin, salt, and pepper. Stir well; the rice stays raw at this stage and finishes cooking in the air fryer.
Prep the leaves.
- Lay each grape leaf shiny-side down on a flat surface, stem trimmed off. Jarred leaves need a quick rinse to cut the brine; fresh leaves need a 30-second blanch in boiling water to soften.
Roll the dolmas.
- Place about 1 tablespoon of filling near the stem end of each leaf. Fold the sides in, then roll tightly toward the tip, like a small cigar. Repeat with the remaining leaves and filling.
- Arrange in the basket. Place the rolls seam-side down in a single layer in the air fryer basket, packed snugly so they don't unroll. Depending on basket size, you'll likely need two batches.
- Brush and season.
- Combine the remaining lemon juice with 2 tablespoons olive oil and the ¼ cup water. Brush generously over the rolls — this keeps them from drying out and helps the rice steam through.
Air fry.
- Cook at 350°F (175°C) for 15–18 minutes, brushing once more with the lemon-oil mixture halfway through. The rolls are done when the leaves look slightly translucent and the rice is tender.
Rest and serve.
- Let the dolmas sit for 5 minutes before serving — this firms up the rolls so they hold their shape. Serve warm or at room temperature with extra lemon wedges, olive oil, and a side of yogurt or tzatziki.
