Prepare the peanuts
- Place the raw peanuts in a bowl and remove any damaged nuts or loose skin. If the peanuts feel dusty, wipe them with a clean, dry kitchen towel. Avoid adding wet peanuts to the air fryer, because excess moisture can prevent even roasting.
Season lightly
- Add the oil, salt, chilli powder, turmeric, roasted cumin powder, black pepper, chaat masala, and amchur powder. Toss thoroughly so the peanuts are coated as evenly as possible. A light coating is ideal; too much oil or spice mixture can make the peanuts cook unevenly.
Preheat the air fryer
- Preheat the air fryer to 180°C or 350°F for 3 minutes. Preheating helps the peanuts begin roasting immediately and encourages more even browning.
Air fry the peanuts
- Spread the peanuts in a single layer in the air-fryer basket. Cook at 180°C or 350°F for 8 minutes, then shake the basket. Continue cooking for another 2–6 minutes, shaking once or twice, until the peanuts are golden and smell nutty.
- Air fryers vary in strength, so begin checking after 8 minutes. The peanuts will continue to crisp as they cool, so do not wait for them to become very dark inside the basket.
Cool and finish
- Transfer the roasted peanuts to a wide plate and let them cool completely. Taste and add a little extra salt, chaat masala, or amchur if needed. Garnish with coriander only if you plan to serve the peanuts immediately; fresh herbs can reduce storage life.
