- Wash the okra and dry it completely with a clean kitchen towel — any leftover moisture is what causes okra's sliminess, so this step matters.
- Trim the tops and tails, then slice each pod lengthwise into thin strips. Thinner strips crisp up better in the air fryer.
- In a large bowl, toss the okra strips with turmeric, chili powder, cumin powder, coriander powder, amchur, ginger-garlic paste, and salt.
- Add the besan and rice flour, and toss again until every strip is evenly coated. Sprinkle in a few drops of water only if the coating feels too dry to stick.
- Drizzle in the lemon juice and oil, tossing once more to coat.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Lightly grease the basket with spray oil.
- Arrange the okra in a single layer, avoiding overcrowding so air can circulate around each piece.
- Air fry for 10–12 minutes, shaking the basket or flipping the okra halfway through, until golden and crisp.
- Transfer to a plate, sprinkle with chaat masala, and serve immediately.

For reheating, use the air fryer for 1–2 minutes instead of a microwave to preserve the crunch.
